Brazilian Barbecue Versus Korean Barbecue

Churrasco is a Spanish and Portuguese term that pertains to grilled meat or beef. It is popular in Europe and Latin America but remains a primary dish of Brazil, Argentina, Uruguay, Nicaragua and Puerto Rico. However, it is mostly served now at a Churrascaria or Brazilian Steakhouse.

A Brazilian restaurant or Churrascaria serves all-you-can-eat grilled meat. Waiters here practice a serving style called Rodizo or Espeto Corrido, wherein they move with skewers around the restaurant and slice the meat on the customer’s plate.

The traditional barbecue recipe of Churrasco is served with Farofa or seasoned manioc flour, white rice, a variety of grilled sausages and meats, along with a Brazilian vinaigrette salsa. The ingredients of this recipe include ½ cup of salt, 10 pounds of fine quality lamb, beef, ribs, veal and the like (cut), 3 cups of water as well as 6 mashed garlic cloves.

Although Brazilian grills do not make use of sauce on their meats, most Brazilian barbecues actually marinate the meat. Some like to spread some marine salt on the meat while it is being cooked.

Procedure:

Set the fire. However, make sure that the coals are already bright enough before you place the meat.

Assemble the cut meat onto the metallic skewers. Set the grill and turn the skewers from time to time. Once you notice the meat turning brownish in color, prepare the salty baste solution by dissolving some salt in water mixed with garlic. Baste the meat with the liquid mixture.

Cut a few slices from the outer portion and serve. If you plan to keep the meat until another round of serving, let it stay warm on the grill. To keep it fresh and juicy while on the grill, baste it with the salty liquid mixture from time to time.

Another all-time favorite recipe for Brazilian barbecue is the Churrasco de Frango or Chicken Barbecue – Brazilian style. Ingredients per person include 2 tablespoons of olive oil, 1 pound of boneless, skinless chicken (breast part), 1 lime juice, grated Parmesan cheese, 1 cup of natural yogurt, salt and 1 clove of garlic (minced).

Procedure:

Cut the chicken into two-inch cubes. Rub the chicken thoroughly with salt. Soak it in lime juice and oil with garlic. Marinate it for about 2 hours.

Place the chicken cubes in a skewer and baste it with yogurt. Sprinkle some Parmesan cheese.

Put the chicken on the grill. While slowly roasting it, baste it with oil.

As a note, if you will be barbecuing the thigh part of a chicken, you need to pre-cook the chicken in a big pot ad sprinkle with salt. This will give more flavor to the inner parts.

You can serve this with Brazilian salsa vinaigrette and white rice.

Korean Barbecue (Gogi Gui)
Gogi Gui pertains to the Korean method of grilling pork, beef, chicken and other meat. These dishes are actually prepared by the dinner table, on charcoal- or gas-powered grills built in the table’s center. For Korean restaurants that do not have a built-in grill, they use portable stoves on their tables.

Galbi is the most usual form of Korean barbecue derived from marinated beef short ribs. Since Korean barbecue can include various kinds of non-marinated and marinated meat dishes, it can be divided into lots of categories. Thus, Korean barbecue is popular amongst Korean and international customers.

Korean Barbecue Ribs
Ingredients are 2/3 cups of Kikkoman teriyaki sauce, 4 pounds beef short ribs and 1 tbsp. toasted sesame seeds, 2 tsp. Tabasco sauce, 1 tsp. sugar and 2 cloves pressed garlic.

Procedure:

Bone it ½ deep, ½ apart, crosswise and lengthwise. Put the ribs inside a large plastic bag.

Combine sesame seeds, teriyaki sauce, sugar, garlic and Tabasco sauce. Pour the mixture onto the ribs.

Press the air out of the bag and tie the top securely.

Refrigerate it for 4 hours, occasionally turning over the bag.

Take out the ribs and grill or broil about 4 inches from the heat coils. For hot coals, it will take 15 up to 18 minutes. A good indication is when the ribs are brown and crisp on the outside.

Occasionally turn the ribs over.

Joe’s Stone Crab

Get ready for waiting for a table, that´s how good and popular this traditional seafood heaven is. And no, they don´t take don´t take any reservations. Their menu is very varied, atmosphere is lovely and the service is top-notch. Joe´s serves the best grab-legs in town together with large side dishes. The experience they have of preparing the grabs comes with the long experience. This restaurant has served the Miami Beach folk since 1913. Must-go place once you´re in town, but save this for a special occasion, the night might get a bit pricy.

This little, minimalistically decorated 30-seater restaurant is one of the few Curry places that exist the next time you want to go back. The turnover in Asian restaurants is high in Miami. Don´t even take a look at the dessert menu of this place, I assure you, you won´t have any room for sweet after eating your main course. This Brazilian chain restaurant is a meat eater´s paradise. And don´t worry for taking you´re vegetarian friend here, their salad bar itself is also a treat. Eat as much as can, the waiter will keep coming with meat until you show him red card as a sign of being full. If going at lunch hour, sleep a siesta afterwards.

Review of Red and Green Brazilian Steakhouse in Atlanta

There has been an awful lot of media buzz lately about a particular Brazilian Steakhouse in Atlanta, so I went to go check it out. I called in advance to tell them I was coming, and that I was a member of the media, but they didn’t seem to care, and I wondered why. Were they crazy, stupid, incompetent, or so busy with lines around the corner they just didn’t understand me? I soon found out the answer, and it almost knocked me out of my seat.

The Red & Green Steakhouse in Atlanta is the expensive surrogate child of Mr. Young Lee, a famously renowned business man in the Atlanta area. This guy made his fortune in land and laundry, as half the city has. Unlike the other half of the city, he’s dedicated what should be his retirement to making a killer restaurant, even if it earns him more friends than dollars.

Normally, when a restaurant doesn’t care that I’m a member of the media, it means that they already know that they offer poor service, lackluster food, or have prices so far out of market rates that it just doesn’t matter, so long as people keep finding a reason to stumble through the damn door.

Of all the Brazilian Steakhouse restaurants I’ve been to in my life, this one easily ranks in the top three, except for price and value, where it beats the competition by miles. Just like everywhere I’ve been, the food is good, the service is exceptional, the selection is as broad as your ability to accept and taste it, but here the price was about half of what I expected.

I did a review last year of another Brazilian Steakhouse in Atlanta, and it was impressive. The food was about as good as at the Red & Green Steakhouse, the service was agreeable, it was only the parking and location that lacked. The big difference was the price. The other place, who’s name I won’t say since it’s Fugo de Chao, cost literally twice as much… It would be one thing if they gave you more, but both restaurants offer the finest Angus cuts and hand-selected produce, but one costs literally, exactly twice as much as the other, and they don’t even have parking?

Fugo De Chao is likely going to face more than stiff competition from the Red & Green Steakhouse, they’re likely to lose half their business. This newcomer has a better wine selection, vastly better pricing, equal selection and quality, a better salad bar, and does it without forcing you to stuff your car in some creepy, suspicious, dangerous back lot for the night while just hoping for the best.

First time ever, I’m giving a restaurant the full five-stars. The Red and Green Steakhouse in Atlanta gets my elusive top rating… now if I could only convince them I deserve some free pie I’d be set for life… Ah well, so it goes.

The Brazilian “Cafezinho” Tradition

The “cafezinho” tradition is as Brazilian as Apple Pie is American. “Cafezinho” is the diminutive word in Portuguese for coffee. In Brazil, however, “cafezinho” is the way to welcome anyone into homes, businesses or just about anywhere.

In Brazil it does not take long to learn the phrase “você quer um cafezinho?” (do you want a little coffee?). This is a question heard everywhere, all day long and almost always followed by a very small cup of very potent coffee. You can call it a mini espresso with a powerful punch!

When in Brazil, do as Brazilians do. It is fun learning about the culture and behaviors of people in foreign countries.

  • Music and long, animated conversations are common among Brazilians.
  • Interrupting a conversation is a sign of enthusiasm, not rudeness.
  • Clicking the tongue and shaking the head indicates disagreement or disapproval.
  • Brazilians enjoy joking, informality and friendships. Toast with a “Saude” (Sah-OO-day) or “Viva” (VEE-va).
  • Brazilians like to stand very close to one another and it is very common to touch arms, elbows and backs.
  • The O.K. hand signal is a very rude gesture in Brazil.

Brazilians drink coffee all day long at specialty coffee bars, bakeries, restaurants, street cafes, and just about anywhere. Brazilians are very personable. Business meetings usually start with casual conversation and it is up to the host to start the business discussion.

  • Often, Brazilians have “cafezinho” in the middle of a business discussion.
  • At such times, they may switch to non-business related talk, including storytelling prompted by the fragrance of the coffee which brings memory of a childhood experience or some other event.
  • The ability to go with the flow and enjoy the moment, without a hurried and pressured approach to “get back to business,” usually will spell business success and can be the start of a long term friendship.
  • Take time to greet and say good-bye to each person present at a meeting, dinner or get together.

During a “cafezinho” break the conversation can turn to many different subjects. For example,

  • A favorite coffee shake recipe.
  • Manioc as an essential eating ingredient in Brazil.
  • The best place to get tasty Gaucho churrasco in Rio.
  • The use of coffee as a basting ingredient for chicken or ribs.
  • How to make Brazilian “cocadas,” Couscous or roasted bananas covered with cinnamon.
  • Soccer as Brazil’s national sport and the next opportunity to win the World Cup.

Brazilian Coffee, The Coffee Valley Festival, And Cafezinho: A Match Made In Beans!

The Festival Vale do Cafe (The Coffee Valley Festival) is a ten-day celebration of classical music, Brazilian popular music, folkloric music, jongo, caxambu, capoeira, calango, can-verde, maculele, samba, choro, bossa nova, forro, Brazilian jazz, and orchestral works, among other music.

The event takes place from late July to early August each year. It is one of the world’s best music festivals worth attending. The venue is in the Paraiba River Valley in Rio de Janeiro state. This is a beautiful region of rolling green hills, mild weather, blue skies and small towns.

The Festival Vale do Cafe was started about nine years ago by Cristina Braga, first harpist of the Symphonic Orchestra of Rio’s Municipal Theater, and Turibio Santos, considered one of the best Brazilian classical guitarists alive. The seating capacity for the events is limited and tickets sell fast. The event is very successful and attracts many artists, famous people, tourists, and investors. The town of Vassouras has many colonial buildings and impressive estates on old coffee farms. In the 19th century, this valley was Brazil’s coffee-growing center. Over time, coffee moved to other regions of Brazil that include Parana, Sao Paulo, Minas Gerais, and Bahia.

Vassouras is a town that is fast changing and becoming a world-class cultural destination. There are already many high-end hotels, villas and hotel-spas. Gourmet restaurants featuring Brazilian and international cuisine delicacies please the most demanding palates. Brazilian coffee is served at all hours to the delight of coffee and music lovers seeking the extra buzz in their Cafezinho servings. Cafezinho is a small but potent coffee serving that re-energizes the body for the never ending dance rhythms playing all around.

The Festival Vale do Cafe attracts the best names in music that perform all types of music styles in settings that are very picturesque and intimate. For example, there are events in the church and main square of Vassoura as well as in other area cities that are free to the public. The concerts staged at preserved coffee plantations or “Fazendas” in the region require admission fees well worth paying. These coffee plantations date back to the 19th century and have history anchored in slavery which Brazil abolished in 1889. They are very impressive estates with beautiful landscaping, tropical flowers and many varieties of trees. One of the most unusual trees is the Bombax, a tree without leaves covered by pink flowers. The leaves grow after the flowers die, a rather unusual phenomenon that makes this tree a mystery to many.

The Institute of Preservation and Development of the Paraiba Valley, PRESERVALE, promotes the restoration of the magnificent 19th century coffee mansions as close as possible to their original condition. Coffee estates include Fazenda Cachoeira do Mato Dentro; Fazenda Cachoeira Grange; Fazenda Secretario; Fazenda Mulungu Mermelho; Fazenda Santa Eufrasia; Fazenda Sao Fernando; and Fazenda Sao Luiz da Boa Sorte. Many of these plantation estates are open to the public. A few offer sleeping accommodations to visitors in the former slave quarters, an interesting experience.

Visiting the coffee plantations provides a unique first hand view of plantation lifestyle and a good understanding about the land, crop and people management challenges the plantation owners had. One of the best programs of the festival is the Cortejo de Tradicoes. This is a choreographed representation of regional musical and cultural traditions. Basically, it resembles a parade of Afro-Brazilian traditions performed simultaneously by many colorful groups. From a historical and musical perspective, this presentation alone proves how rich the Brazilian heritage is as a result of its multicultural population.

San Diego Restaurants You Can’t Miss!

This article is the first of a series about San Diego Restaurants you can’t
miss. If you live in San Diego, or even more important, if you come to America’s finest city as a visitor, I want to give you some great options for dining in San Diego, California.

I live in San Diego for more than 6 years, I’m originally from Brazil, so please
forgive me for any mistakes, because english is not my first language, but I’ll
try my best to comply with all the grammar rules.

Being an engineer from Brazil, I want to start telling you about the brazilian
cuisine and the brazilian restaurants available in San Diego.

One of the most tradicitional kind of restaurant/cuisine in Brazil, is what
we call “churrascaria”, which would be a bbq restaurant, but different
than anything you can imagine, if you don’t know how it is yet.

Of course we’re talking meat here, so if you’re a vegetarian I apologize, but
It’s not going to be a good choice for you. The Brazilian bbq steakhouse, whatever
you want to call it, It’s an amazing dining experience, specially if you never
tried.

So what is it, exactly?

It starts with a salad bar and a all you can eat buffet that includes most
tradicional dishes from Brazil. That would be more than enough, but don’t let
that fool you, the fun is yet to begin.

At your table, there is a ‘sign’ with two sides, one red and one green. You
use that to show the servers that you “want meat” when the green side
is up or red, if you’re not up to it. The servers will bring you more than 20
different kinds and/or cuts of meat, all from the bbq, that includes ribs, pork
ribs, chicken, italian style sausage, turkey wrapped in bacon, filet mignon
wrapped in bacon, skirt stake, try tip, try tip with garlic, top sirloin . .
. Well, you get the picture.

They will come to your table, if your “sign” is green and keep serving
you until you can’t handle no more.

It’s an amazing experience. I took a few american friends to this restaurant
for their first time, and they loved it. They couldn’t believe the amount of
food and the quality of the food. Everything is delicius. Of course quality
will vary from place to place, and even how many different kinds of meats they
will serve, but the experience is similar.

In San Diego, there is two different Brazilian BBQ restaurants, both in downtown
and actually, very close to each other.

One is called Rei do Gado, or the king of the cows. It’s a good restaurant,
It’s been in business for a while now and on a saturday night you’ll need reservations.
Prices can be expensive for a saturday night, around $35 per person. One great
tip is to go for a weekday lunch special, that costs aroun $13 a person, a much
better deal. But don’t get me wrong, It’s worth it every dollar. Rei do Gado
is located at 939 Fourth Avenue, in downtown San Diego, on the famous Gaslamp
Quarter. The zipcode is 92101 if you want to da a map search.

The other great choice is Samba Grill Churrascaria, also in downtown, and like
they like to call, It’s an endless parade of skewered meat! Samba Grill headquarter
is in Salt Lake City, and the San Diego location is at 514, Horton Plaza, Gaslamp
Quaters, Downtown San Diego (92101). Yes, it’s inside the Horton Plaza mall.

So there you go, if you have never tried one of this brazilian bbq places,
